Tea Cookies

For ILD I made some pink tea cookies and wanted to share the recipe with everyone! These take about half an hour to make, and were a big hit with my friends this evening. Recipe and photo through the cut:

Tea Cookies

For these cookies I used Youthberry & Wild Orange Blossom Flavored White Tea from Teavana. (awesome store-if there's one in your area I highly recommend it!) I found that for cookies you want to use a fruit flavored tea, black teas and oolongs tend to make the cookies taste bitter. (green tea works well if you serve them with green tea!)

4 heaping t fruit flavored tea
1/2 C water
1/3 C butter
1/3 C shortening
3/4 C sugar
1 t baking powder
1 egg
1 t vanilla
2 C flour

Boil 1/2C water & steep your tea for at least 5 minutes. Put in fridge to cool quickly.

Meanwhile, beat butter & shortening on high speed 30 seconds. Add sugar, baking powder, & a dash salt. Beat til combined. Add 4t of your brewed tea, egg & vanilla. Beat until combined.

Add flour 1C at a time, & beat mixture.

Plop cookies onto baking sheet about golfball sized. Take a flat bottomed glass, wet with water and dip bottom into sugar. Press sugared glass onto each cookie so they have just flattened out. Bake for 9 minutes in a 375 degree oven. Enjoy!

(the color of your cookies will depend on what type of tea you use, if you want a vibrant color, try a few drops of food coloring) If anyone tries this recipe, let me know what you think!
